I decided to take the journey never traveled by my family and make some Apple Toffee Cake. Today's recipe and directions are borrowed from The Canadian Baker.
Ingredients:
- 1/2 cup of butter
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 2 cups of all purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 cup sour cream
- 2 cups of diced apples
- 3/4 toffee bits (Skor bits)
- 1/3 cup all purpose flour
- 2 tbsp. brown sugar
- 1/4 cup of butter
- 3/4 cup of Skor bits
- Cream butter, sugar, eggs and vanilla in a large bowl. I used a medium bowl, was a terrible idea.
- Use electric mixer to mix until light and fluffy.
- In a second bowl combine flour, baking powder, baking soda and salt.
- Add to creamed mixture alternatively with sour cream. Three additions of the dry and two additions of sour cream.
- Fold in toffee bits and apples.
- Spread evenly in a lightly greased 13x9 pan.
- Preheat oven to 350 degrees.
- To make toppings, combine all ingredients in a bowl until mix is crumbly.
- Sprinkle evenly over batter.
- Bake 35-40 minutes or until finished.
Now, I know what you're thinking. It looks like a crumbly cake thing. Well, that's exactly what it is and boy is it delicious. I'll be honest, when I dug in for that first bite, I wasn't entirely sure what I was digging into, but it is DELICIOUS. She may not look like much, but she's got it where it counts.
You got the cake, the apple, the toffee and it all comes together for an amazing lasting flavor. It isn't too much for the taste and it's not too dry, it's just perfect. I got plenty left, so who wants some?
